
Harry Potter is by far one of my absolute favorites and I intend on making many HP recipes over the course of the blog. But where to start? That was a decidedly hard question; there are too many to choose from! I finally decided on the classic Golden Snitch from the popular wizarding game, Quidditch. The Snitch is arguably the most important ball in the game as it is tiny, wicked fast, awards 150 points to the team who catches it, and ends the game. So, I did a little research a la Google and saw so. Freaking. Many. Cake. Pops. And some truffles. (Don’t tell the boy I saw truffles; he’ll want them and I’m not ready to make them.) Well, most of what I saw looked perfectly lovely and all but, geez, way overdone. So, Nilla Wafers.
I’m actually not sure what made these pop into my head, but another brief research stint informed me that Nilla Wafer sandwiches are a thing. The gears started turning. Quick, what’s the first recipe you think of when someone says ‘Nilla Wafer’? Banana pudding, right? Pretty good, but a little blah, if you know what I mean. But bananas and caramel, now, that’s really something.I can totally sandwich that. Oh, and toss some wings on ’em. Snitches love wings. (I’m sorry.)
The result? A desserty but not-too-sweet two-bite sandwich made in heaven. And it’s relatively easy, especially if you have a steady hand. Ready? Let’s go.
Gamers, grab your mats:
- 48 regular size Nilla Wafers – I know the Snitch is tiny but trust me, these are small enough. Don’t go Mini.
- 2-ish bananas
- 1- 14 oz. can sweetened condensed milk
- Bright White Candy Melts
- yellow decorative icing

Preheat your oven to 425 degrees F. Pour entire can of sweetened condensed milk into a 9 inch pie plate. Would you believe I actually had one?

Place in a large shallow tray and cover with aluminum foil. Fill tray with half an inch of water.Bake for 1 hour 45 minutes to 2 hours. It should be thick and caramel colored.

While that’s baking, some prep work is in order. Tear out a length of parchment paper. Take out a Nilla Wafer for measuring and draw a set of wings around it like so:

Two horizontal parallel lines should connect the wings together behind the cookie. Draw out another 23 sets of wings.If you’re clever, you can fold the paper and trace from the original set of wings as you go. Much easier. Melt about half a bag of white Candy Melts in the microwave according to package instructions.

Transfer Candy Melts into a sturdy plastic sandwich baggie, seal, and snip off one of the bottom corners. Try to snip off as little as possible so you can pipe out thin lines and maintain control. The world will not come to an end if you don’t get everything perfect. Start by outlining the wings then make zigzags on the inside. See below:


Thinly slice two-ish bananas into 24 pieces. A little thinner that what’s pictured below is probably ideal.

By this time your wings should be dry and solid. If you gently slide your hand underneath the parchment these should lift right off. Refrigerate banana slices and wings until needed.Remove caramel from oven, uncover, and whisk until smooth.

While your caramel is cooling, add the detail work to the tops of your Snitches. You should be icing 24 cookies total. To replicate my design, use a #3 metal tip and follow images below:




The icing will be dry by the time you’re ready for assembly. To assemble, place a small dollop of caramel on the underside of a plain wafer and spread gently. Do not go all the way out to the edge. What you see below is probably a little too much:

Gently press a set of wings into the caramel. Seriously. gently. They’re hella fragile.

Top with a banana slice.

Apply a very small amount of caramel to the underside of one of the iced cookies and top your sandwich off:

Note: You can actually forgo the caramel on the top cookie entirely, if you prefer. This second layer of caramel has a tendency to make the top slide around and they are a pain in the ass to serve.

That’s it! Pardon my ego but, I think these are worthy of a gourmet magazine feature. Whip up a batch and I’m sure you’ll agree!

I love anything Harry Potter and even though I don’t see myself being able to make these (sob), mostly because half the ingredients arent available in my side of the world, these look delicious!

Nilla wafers and candy melts. I live in India and I haven’t come across either..

Alright. How about subbing 5oz. white chocolate chips with 1 tablespoon of shortening, melted together for the candy melts and… Hm. It would have to be a relatively small neutral flavored cookie for a Nilla wafer substitute. Hope that helps!
